Giving thanks
As many people know, one of my personal Thanksgiving traditions involves making the Tofurky – a roasted and basted soy-based loaf that is a substitute for the usual turkey. I love making my little vegan feast, and sharing it with the one person who is willing to eat it.
But this year I am bereft of my precious Tofurky as well, as it is not sold in France. So I am not only lacking the food to put on the table, but the company to share it with as well! Although a meat substitute might sound odd to many, I assure you it’s actually quite delicious (especially when I make it!); and besides, the dish also serves another purpose: to celebrate the advent of my vegetarianism, now entering its 15th year.
A celebration of gratitude and hope, and of commitment – to one’s values, ideals, and loved ones – occurring when autumn is in full swing: what’s not to like about this holiday? Happy Thanksgiving.
